Craving something light, sweet, and delicious? These soft-baked lemon cookies are melt-in-your-mouth and super easy to make!
Ingredients:
Wet:
- 1/3 cup melted coconut oil
- 1/3 cup maple syrup
- 1 egg
- 1 tbsp lemon juice
Dry:

1 ½ cup almond flour

4 tbsp coconut flour

½ tsp salt

1 tsp baking powder

zest of one lemon
Glaze (non-paleo):
- 1/4 cup powdered sugar
- 2-3 tsp lemon juice
- zest of one lemon
Directions:
1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
2. In a large bowl, mix together the wet ingredients until smooth.
3. In a separate bowl, mix the dry ingredients and slowly incorporate the wet. Mix until combined.
4. Place the dough in the refrigerator for 20-30 minutes.
5. Once firm, scoop about a tablespoon of dough per cookie onto the baking sheet and flatten to whatever cookie size you prefer.
6. Bake for 8-10 minutes or until golden brown. Cool on a wire rack.
7. For the glaze, combine powdered sugar and lemon juice until you have a smooth consistency. Add the lemon zest and stir until combined. Pour the glaze onto cooled cookies and enjoy!
