If you’re a chocolate enthusiast, you’ve come to the right place! Our triple chocolate protein muffins are not only incredibly tasty but also packed with protein, making them an excellent choice for a nutritious snack or a quick breakfast on the go.
Triple Chocolate Protein Muffins
Ingredients:
- 1/4 cup honey
- 1/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 3 eggs, room temperature
- 2 tsp vanilla extract
- 1/4 cup Greek yogurt
- 1/2 cup unsweetened cocoa powder
- 1/4 cup Now Foods Chocolate Whey Protein
- 2 cups almond flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips (We love Enjoy Life Dark Chocolate Morsels)
Directions:
- Preheat oven to 350 degrees F and line a muffin tin.
- In a bowl, combine honey, coconut sugar, and coconut oil. Whisk in the eggs for 30-60 seconds.
- Add the vanilla and yogurt and stir until smooth.
- Slowly mix in the cocoa powder, whey protein, almond flour, baking powder, baking soda, and salt. Gently fold in the chocolate chips.
- Add the batter to the lined muffin tins. Make sure to add a few extra chocolate chips on top!
- Bake for 16-19 minutes or until the muffin bottoms have set. Let sit for a few minutes once out of the oven and enjoy!
